Breadcrumbs are essentially a coating ingredient used for deep-frying, which locks in the moisture of the food and provides a light, crispy texture. They are mainly divided into two types: Traditional breadcrumbs – made by fermenting and baking bread, then crushing and sieving. The process involves many steps, and the texture and oil absorption are affected by the quality of the bread. Extruded breadcrumbs – produced using modern extrusion puffing technology, where the mixed powders are directly expanded under high temperature and pressure, then dried and crushed. Their pore structure is more uniform and finer, and they can be in the form of flakes, needles, or granules. They have lower oil absorption, a fresher mouthfeel, and support continuous, automated production with highly consistent quality.

Mixing and conveying: The raw materials are fed into a mixer, where water is added proportionally and mixed evenly. Then a screw feeder delivers the moistened mixture steadily and quantitatively into the extruder inlet, ensuring an uninterrupted material supply.
High-temperature puffing and forming: This is the most critical station-the twin-screw extruder. The mixed powder is subjected to high temperature (120–170°C), high pressure, and strong shear forces inside the barrel, causing the starch to gelatinize instantly. When the material is extruded through the die, the pressure drops sharply, and the internal moisture vaporizes rapidly, forming expanded strips or sheets full of micropores. By changing the die, the semi-finished breadcrumbs can be directly obtained in flake, strip, or needle shapes. The self-cleaning property and high mixing efficiency of the twin-screw extruder ensure stable continuous production and uniform pore distribution in the product.

Cooling and cutting: The extrudate is hot and soft, so it passes through a cooling conveyor belt to reduce temperature and solidify the surface, preventing sticking. Subsequently, a rotary cutter slices the continuous expanded strips into preset lengths for further processing.
Drying: The cut semi-finished products still have a high moisture content and must go through a continuous multi-layer dryer or belt dryer. Under hot-air circulation, the moisture is reduced to below 5%, making the particles crisp and firm, giving the breadcrumbs the required crunchy texture and greatly extending shelf life.
Crushing and sieving: The dried material enters a turbo mill or tooth-grinder, where it is ground into crumbs of the desired size. Then a vibrating grading screen precisely separates the material: particles that meet the size requirement become finished breadcrumbs; overly fine powder can be recycled, and oversized particles can be returned for re-crushing. After this step, the breadcrumbs have uniform particle size and an attractive appearance.
Automatic packaging: Finally, the qualified extruded breadcrumbs are fed into an automatic weighing and packaging machine for metering, filling, and sealing, forming saleable commercial packages.
The entire production line can adjust capacity through central control, with mature solutions ranging from 100 kg/h to over 800 kg/h, flexibly meeting the needs of food factories of different scales.
