Modified starch is a type of starch that has undergone chemical or physical treatments to alter its properties. These modifications may include changes in its solubility, viscosity, stability, or gelatinization characteristics. Modified starch is commonly used in a variety of food applications as a thickener, stabilizer, emulsifier, or texture enhancer. It can improve the texture, appearance, and shelf life of processed foods while also providing functional benefits such as increased freeze-thaw stability, improved heat resistance, or reduced retrogradation. Some common types of modified starch include pregelatinized starches, cross-linked starches, acetylated starches, and hydrolyzed starches.

The modified starch (pregelatinized starch) production line selects corn starch, tapioca starch, potato starch and other materials as the main raw materials according to different product requirements. The cutting effect denatures starch, introduces new functional groups on starch molecules or changes the size of starch molecules and the properties of starch granules, thereby changing the natural characteristics of starch (such as: thermal viscosity and its stability, freeze-thaw stability, gelling force, film-forming, transparency, etc.), making it more suitable for certain application requirements.
