When the purity of original starch is the same, the viscoelasticity of products containing more amylose will be higher: Pregelatinized starch made from original starch with a short storage period Product with high viscoelasticity. The moisture content of starch plays a decisive role in the degree of gelatinization. The higher the moisture content, the easier it is for starch to gelatinize.
