Starch granules have a structure with alternating crystalline and non-crystalline regions. Sufficient energy is provided by heating to destroy the weak hydrogen bonds in the crystalline micelle region. After the particles begin to hydrate and absorb water, the crystalline region disappears and most of the amylose dissolves into the solution. In the process, the viscosity of the solution increases, the starch granules break, and the birefringence disappears. This process is called gelatinization.
