Process And Advantages
1. Starch gelatinization and degradation.
After the raw material is extruded and expanded, the starch mainly undergoes two changes. The first is starch gelatinization. The puffing process dismantles the dense crystal structure of starch molecules in raw corn. The crystal structure begins to absorb water and disintegrate, hydrogen bonds begin to break, and the expanded starch granules break and become a viscous melt. At the outlet of the puffing machine, due to the sudden drop in pressure and the instantaneous loss of steam, a large number of expanded starch granules are disintegrated, and the starch is gelatinized, forming puffed corn with many micropores.
On the other hand, starch is degraded, the average molecular weight of starch is significantly reduced, and small molecule oligosaccharides such as maltodextrin can be produced through cracking. Gelatinized starch has strong water absorption and much stronger adhesive function than ordinary starch, which can reduce the amount of starch used in production and provide more choices for other raw materials.
2. Protein denaturation.
The protein-containing material is subjected to the combined effects of high temperature, high pressure, and high shear force in the extruder, the tertiary and quaternary structures of the protein are destroyed, the molecular structure of the protein is stretched and reorganized, the surface tends to be uniform, and the intermolecular hydrogen bonds, Disulfide bonds, etc. are partially broken, leading to eventual denaturation of the protein.
3. Fat release.
During the extrusion process, the cell wall of the oilseed is destroyed to release the oil in it. This processing method can improve the utilization rate of the oil. Under ideal processing conditions, the digestibility of the fat thus processed is close to the digestibility of the oil extracted by leached meal processing. Puffing can also form fat and starch or protein together to form a composite product lipoprotein or lipopolysaccharide, which reduces the content of free fatty acids, at the same time passivates lipase, inhibits the degradation of oil, and reduces the rancidity of oil components during product storage and transportation.
4. Increase palatability and digestibility.
The extruded feed has a small particle size, is crispy, and emits a burnt aroma, and the palatability is improved. The expanded feed has a loose and disordered structure. This change provides a larger contact area for the action of the enzyme, reduces steric hindrance, and exposes the starch chain and peptide chain, which speeds up the action of the enzyme and is beneficial to the action of the feed. Digestion and absorption, thereby improving feed digestibility.
5. Improve fiber solubility.
A large number of studies have shown that extrusion can greatly reduce the crude fiber content in feed. Through extrusion technology, due to humidification, heating, pressurization and expansion during extrusion, lignin in each layer between cells and in the cell wall is melted, some hydrogen bonds are broken, crystallinity is reduced, and macromolecular substances undergo decomposition reactions. The original compact structure becomes fluffy, releasing some digestible substances, thereby improving the utilization rate of feed. Therefore, extrusion processing significantly improves the digestibility of cellulose.
6. Extend the shelf life of feed and reduce pathogenic bacteria.
The most basic function of feed expansion is to reduce the content of bacteria, mold and fungi in raw materials, thereby improving the hygienic quality of feed. For example, during the high temperature and high pressure extruding process, the pathogenic bacteria such as E. coli, mold, and Aspergillus flavus in the feed are killed, which can effectively reduce the incidence of colibacillosis, enteritis, and diarrhea.
