In recent years, pregelatinized starches such as non-cereal Yangmai and Limei have been used in gluten-free bread. As the basic skeleton of baking, they have good functions of preserving freshness and improving the taste of bread. 5% pregelatinized starch is used in frozen dough bread. It can effectively delay the decline in bread quality and specific volume caused by freezing and the damage to the bread gluten network structure. Pregelatinized sodium octenyl succinate starch, as a bread improver, can promote the bread to obtain a large average gas space and hardness value. 5~10% pregelatinized sodium octenyl succinate starch can reduce the dough development time and improve the water absorption stability of starch.
